Beans & Legumes: White Bean

White Bean Soup (*or potato) :: 豆のスープ :: alubia blanca

Prep Time: 5 minutes


  1. Leftover Greens with soup
  2. 2C Chicken broth
  3. 1C -soaked overnight- rinsed dried beans, or two (2) 15oz cans of white beans
  4. 4 Diced potatoes (optional substitution for beans)
  5. Sliced chorizo or Italian hot-spiced sausage

How To:

  1. Add chicken stock to the One Pot.
  2. Add beans (or potatoes if using).
  3. Add sausage.
  4. Pressure cook dried beans for 30 minutes. If using canned and/or pototoes, pressure cook for 5 minutes – with natural release.
  5. After pot has set to keep-warm mode, stir-in leftover greens (or fresh Kale).
  6. The greens add vinegar and a spiced taste, add more if desired. If using fresh Kale, consider garnishing the soup with fried garlic, red pepper flakes, and vinegar. Add salt & pepper as desired.
