Kimchi Soup :: キムチスープ :: sopa de kimchi
Prep Time: 5 minutes
Ingredients:
Chicken Stock
2- 3 cloves Garlic
Tofu
Ground pork (optional)
1.25C Kimchi
Sliced Mushrooms (optional)
2 eggs (optional)

Not sure what to do with kimchi? This soup gives you all the flavor, and is a full “one-pot” meal…
How To:
- Saute garlic in pan with a bit of neutral oil.
- Add ground pork (if using), cook until no longer pink.
- Add kimchi, mix with pork for about 1 minute.
- Add additional vegetables, and tofu, mix-in.
- Add chicken stock, simmer for about 10 minutes.
- Beat eggs in a separate bowl.
- Drizzle eggs over top of the soup, allow to sit for about 1 minute to cook through. Do not stir.
- Serve hot.
