Dessert: Sweet Potato Pie

Sweet Potato Pie :: 焼きいもパイ :: pastel de camote

Prep Time: 20-30 minutes


Pre-made Grahm Cracker Crust

8-10 small sweet potatoes (I used purple); 4-5 large; 3 C mashed

1/4 to 1/2 C sugar

2 large eggs, beaten

1/4 C milk or oat milk

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp ground ginger

1/4 tsp ground cloves

This pie is on regular rotation at our house! I make a similar version with pumpkin, and we eat both throughout the autumn and winter months. It is great for breakfast with some yogurt, mid-day snacking with coffee, or a late night dessert, ocasssionally with a digestif.

How To:

  1. Steam potatoes in the Instant Pot. Fill the pot – about a quarter full – with water, add riser insert, and steamer basket on top. Place rinsed and cleaned potatoes into steamer basket. Pressure cook for 8-10 minutes on high. This can be done a day in advance.
  2. Preheat oven to 350 degrees.
  3. After potatoes have cooled, peel the potato. Discard (for compost).
  4. Mix eggs, sugar and milk
  5. Place potatoes into a mixer or blender, add egg mixture and seasonings. Blend.
  6. Pour mixture into pre-made pie crust.
  7. Bake for 60 minutes.

Kidwise: My kids prefer the pumpkin version, but I make whatever I have, or need to use before it might go bad …
